Ingredients

  • 4 cups water
  • 2 cups white cornmeal (maize flour)

Instructions

    Bring water to a rolling boil in a pot.

    Gradually add the cornmeal while stirring continuously with a wooden spoon (mwiko) to prevent lumps.

    Continue to stir and fold the mixture, pressing it against the sides of the pot. It will become very thick.

    Cook for about 10-15 minutes, until the ugali is firm, cooked through, and pulls away from the sides of the pot.

    Shape it into a mound. You can serve it hot directly from the pot or let it cool slightly to firm up more.
