Ingredients

  • 1 large bunch sukuma wiki (collard greens), finely chopped
  • 1 large onion, chopped
  • 2 large tomatoes, diced
  • 2 tbsp cooking oil
  • Salt to taste
  • 1/4 tsp of baking soda (optional, for retaining green color)

Instructions

    Heat oil in a large pan or skillet over medium heat.

    Add the chopped onions and sauté until translucent and soft.

    Add the diced tomatoes and cook until they break down into a soft paste.

    Add the chopped sukuma wiki and baking soda (if using). Stir-fry for 5-10 minutes, until the greens are wilted but still have a slight crunch.

    Season with salt and stir well.
