Ingredients
- 1 large bunch sukuma wiki (collard greens), finely chopped
- 1 large onion, chopped
- 2 large tomatoes, diced
- 2 tbsp cooking oil
- Salt to taste
- 1/4 tsp of baking soda (optional, for retaining green color)
Instructions

Heat oil in a large pan or skillet over medium heat.

Add the chopped onions and sauté until translucent and soft.

Add the diced tomatoes and cook until they break down into a soft paste.

Add the chopped sukuma wiki and baking soda (if using). Stir-fry for 5-10 minutes, until the greens are wilted but still have a slight crunch.

Season with salt and stir well.
