Beef Stew

Ingredients
- 1 kg beef stew meat, cubed
- 2 tbsp vegetable oil
- 2 onions, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 3 large tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 tbsp tomato paste
- 1 tsp curry powder
- 4 cups beef broth or water
- Salt and pepper to taste
- 1 bunch fresh coriander, chopped

Season the beef with salt and pepper. In a large pot, heat the oil and brown the beef in batches. Set aside.

In the same pot, sauté the onions until soft. Add garlic and ginger and cook for another minute.

Add the tomatoes and tomato paste. Cook until the tomatoes break down.

Stir in the curry powder, then return the beef to the pot.

Pour in the beef broth, bring to a simmer, then reduce the heat, cover and cook for 1 hour.

Add the potatoes and carrots. Simmer for another 30 minutes, or until the vegetables and beef are tender.

Season with salt and pepper to taste. Stir in coriander before serving.
