Ingredients

  • 2 whole tilapia, scaled and cleaned
  • Salt to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Juice of 1 lemon
  • Vegetable oil for deep frying

Instructions

    Pat the fish dry. Make a few shallow diagonal cuts on both sides of the fish.

    In a small bowl, mix salt, garlic powder, and paprika. Rub the seasoning all over the fish, inside and out.

    Squeeze lemon juice over the fish and let it marinate for at least 10 minutes.

    In a large, deep skillet, heat about 2 inches of oil to 350°F (175°C).

    Carefully place the fish in the hot oil. Fry for about 5-7 minutes on each side, until golden brown, crispy, and cooked through.

    Remove from the oil and drain on paper towels.

    Serve hot with ugali and kachumbari.
