Ingredients

  • 1 kg potatoes, peeled and boiled
  • 2 cups boiled maize kernels
  • 1 cup boiled beans (e.g., kidney beans)
  • 2 cups chopped pumpkin leaves or spinach
  • 1 onion, finely chopped
  • 2 tbsp butter or oil
  • Salt to taste

Instructions

    In a pan, heat the butter/oil and sauté the onions until soft.

    Add the chopped pumpkin leaves/spinach and cook until wilted. Set aside.

    Mash the boiled potatoes until smooth.

    Add the boiled maize, beans, and the cooked greens mixture to the mashed potatoes.
